I do that sometimes, the rest goes in the garden on the composter. Pickle juice is said to be very good against muscle cramps and also good to stay hydrated. Its a good alternative to soja sauce or salt in your food. OMG they are spectacular. Also works with asparagus, cocktail onions, and brussels sprouts! I love bloody marys and they are a wonderful garnish for sunday brunches with the boyfriend. But I do love eating them by themselves, too. But also, after all of the juice is gone, pickle jars are perfect for storing soups. I always have trouble storing a large batch of soup, but the jars work so well! I add chopped jalapenos, habaneros, garlic and fresh dill to the pickle juice, along with blanched green beans.
